Long sous vide cooking times and BBQ sauces
Marinating or cooking your sous vide ingredients creates delicious results. The low cooking temperature and long cook time gives enough time for your BBQ marinade to work it’s magic on your ingredients of choice. The flavor is intensified because everything is tightly bagged in your food pouch.

Picking the best BBQ sauce for your sous vide cooking
We would have to say that no one BBQ sauce is going to work for everyone. There are sweet BBQ sauces, hot BBQ sauces, super spicy sous vide BBQ sauces. The list goes on.
Mix it up a little and experiment. You will find no shortage of sous viders who can tell you their favorite BBQ sauce, whether their favorite BBQ sauce is store brought or home made.
Maybe add one specific BBQ sauce to one food pouch and a different BBQ sauce to a second food pouch in your water bath and do a bit of a taste test.

How to prepare BBQ sauces before adding them to your sous vide food pouch
Some sous viders add BBQ sauce and their ingredient into their sealed vacuum sealed bag or ziplock bag and pop that into the freezer. That means, when you are ready to eat your sous vide goodness, you can put the food pouch straight into your water bath (without even defrosting).
Once you pull your sous vide food pouch out of your sous vide water oven, your chicken, beef, pork or any other ingredient etc will be moist and tender.
That means that the skin will be as well. This is where your grill becomes your hero. Place your protein skin side down on your cast iron grill or BBQ to crisp the skin. Do the same on the other side. You can then brush on a little more BBQ sauce onto your ingredients if you want to, but that’s not essential.

This one is from a Sous Vide BBQ sauce shredded pork recipe from Anova Culinary:
- 4 cloves garlic, peeled and left whole, plus 1 clove minced
- 1/2 teaspoon celery salt, divided
- 1 cup ketchup
- 1/4 cup finely chopped red onion, plus 1/2 red onion, thinly sliced
- 1/4 cup freshly squeezed orange juice
- 3 tablespoons apple cider vinegar, divided
- 2 tablespoons molasses
- 1 tablespoon tomato paste
- 1 tablespoon freshly squeezed lemon juice
- 1 teaspoon Worcestershire sauce
- 1 teaspoon liquid smoke
- 1 teaspoon yellow mustard
Combine ketchup, chopped red onion, orange juice, 2 tablespoons vinegar, molasses, tomato paste, lemon juice, Worcestershire, liquid smoke, mustard, minced garlic, and remaining 1/4 teaspoon celery salt in a saucepan over medium-high heat.
Bring to boil, reduce heat to low, and simmer for 30 minutes, stirring occasionally. Remove from the heat, cool to room temperature, and refrigerate until serving.
Warm and serve with your sous vide shredded pork dish.
