Sous vide cooking does not need to be expensive. It can be. But it doesn’t have to be. There are two main kitchen gadgets that you can use to enjoy sous vide cooking. The first is a sous vide water oven such as the SousVide Supreme water oven and the other is called a sous vide immersion circulator (also commonly called a precision cooker). The two most popular immersion circulators are the Anova Sous Vide Immersion Circulator and the Joule by ChefSteps.
